  1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  3. Add the roasted butternut squash, vegetable broth, sage, cinnamon, and nutmeg to the pot. Bring to a boil, then reduce the heat and simmer for 10 minutes to allow the flavors to meld together.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.
  5. Taste and adjust the seasoning with salt and pepper as needed.
  6. Serve hot, topped with optional toppings like roasted pumpkin seeds, a drizzle of cream, or fresh sage leaves.
